El Tesoro (the treasure) of Sierra Madre Street brings to Colorado Springs the traditional dishes of Northern New Mexico that features the especially flavorful red and green chiles of the Rio Grande Valley around Espanola east to Chimayo. While we have aimed towards the milder end of the hotness scale, our chiles are fresh and, by definition, will have some pungency. It is an accepted fact in New Mexico that chile is addictive and the more one eats the hotter one likes it... So let us know when you're ready to raise the heat level. The traditional companions to chiles in this region are tortillas made from blue corn originally cultivated by Native Americans in New Mexico, Southern Colorado and North Texas. The tortillas, as well as the black beans and posole, have distinct, robust flavors and textures that compliment the chiles. For the traditionalists, yellow corn tortillas and pinto beans are available upon request
