Oriental Meatloaf popular with many people that do not like meatloaf.

Oriental Meatloaf

Meatloaf
2 cups cooked rice.
  • 1 to 2 lbs. ground meat.
  • 1/2 to 1 cup fine bread crumbs.
  • 2 C (1 can) crushed pineapple, reserve syrup.
  • 4 eggs (1/2+ cup).
  • Cook rice. Take of heat to cool a little.
  • Mix remaining ingredients.
  • Mix in rice.
  • Oil/spray pan to cook in.
  • Put mixture into pan. We like bunt cake pans.
  • Cook one hour.
Sauce
  • 6T Cornstarch
  • 6T Soy Sauce
  • 2T Vinegar
  • 2C Pineapple syrup. Stretch with orange juice, mango juice, or other interesting juices pineapple juice.
  • Mix dry ingredients well in saucepan and liquids in measuring cup.
  • Add just enough liquid to make paste.
  • Very slowly add liquids to avoid clumps. Gently heat, stirring a lot with flat-ended spatula. Constantly stir as sauce thickens.
