APPLE FRITTERS
Ingredients:
Vegetable oil (for frying) 1/4 cup sugar
2 tablespoons sugar 2 teaspoons cinnamon
1 cup flour
1/2 teaspoon salt
1 1/2 teaspoons baking powder
1/3 cup milk
1 egg, slightly beaten
1 cup apples, chopped
1 tablespoon butter, melted
Topping:
1/4 cup sugar
2 teaspoons cinnamon
Directions
Heat oil (about 1 inch deep) to 375 degrees. Meanwhile, in medium bowl, mix together sugar, flour, salt, and baking powder. Combine milk and egg; add to dry ingredients. Stir until well mixed. Add apples and butter, stirring until well blended. Drop teaspoonfuls of dough into hot oil; fry about 30 seconds on each side, until golden brown. Drain on paper towel. While fritters are warm, toss them in mixture of sugar and cinnamon.
Hint: Drop dough into center of fryer; fritters will drift to the side and turn over when starting to turn golden. Do not puncture them while in fryer. Use slotted spoon to remove fritters.
