RED BEANS WITH RICE

AND SMOKED SAUSAGE

Ingredients:

3 16oz cans red beans or kidney beans

1/4 cup onion, chopped

1 clove garlic, chopped

1 bay leaf

2 strips bacon, 1 inch pieces

1/2 tsp black pepper

2 tbs Worcestershire sauce

1/2 tsp salt

1/4 tsp Tabasco sauce

pinch of ground thyme

1 pkg (1lb) smoked sausage, cut into "1" inch diagonals

6 cups hot cooked rice

Directions:

Place all ingredients "except sausage" and "rice" in a 2 quart saucepan. Bring to boil; reduce heat to a simmer, cover, and cook for 2 hours, stirring occasionally. Add sausage the last 30 minutes. Serve over rice. (Serves 6).
