BUTTERBALLS

1 cup soft butter or margarine

1/4 cup sifted confectioners' sugar

1 tsp vanilla extract

2 cups sifted all-purpose flour

1 1/2 cup flaked coconut or nuts

sifted confectioners' sugar for topping

Cream butter until light and fluffy, gradually adding sugar, then vanilla. Blend in flour, then coconut/nuts. Shape into 1 inch balls, place on ungreased cookie sheets, refrigerate about 15 mins. Meanwhile, start heating oven to 350 degrees. Then bake cookies 15 mins. or until delicately browned. Cool and serve sprinkled with confectioners' sugar.
