12 chicken wing
3 tbsp dry sherry
2 small sticks cinnamon (1 inch long)
1 cup water
2 tbsp dark soy sauce
1 tbsp sugar
2 whole star anise or equivalent in broken pieces
salt to taste
Place chicken wings in ungreased wok or pan and add wine. Cook
until almost all wine has evaporated. Add 1 cup water and cook
over medium heat about 10 mins. Add Anise and cinnamon and cook
5 mins. Add soy sauce, sugar and salt. Cover and let simmer
30 mins. Stir occasionally. If it seems too dry add water.
Total cooking time 45 minutes.
