Crust: 2 1/2 cups graham craker crumbs 1/2 cup chopped walnuts 1/2 cup sugar
1/2 cup softened butter Mix crackers, nuts, and sugar. Add butter. Press on bottom and sides of 9"
springform pan. Put in refrigerator. Preheat oven to 500 degrees.
Filling: 5(8 oz) cream cheese 1/4 tsp. vanilla 1 3/4 cup sugar 5 eggs plus 2 yolks 3 tbsp. flour
1/4 cup heavy cream
Mix cream cheese, sugar, flour and vanilla at low to medium speed
5 minutes. Add eggs and yolks, 1 at a time. Pour into pan.
Bake at 500 degrees for 10 minutes. Reduce heat to 250 degrees
and bake for 1 hour and 15 minutes or until golden brown around
the edges. Refrigerate overnight.
