2 cups vegetable oil 2 eggs, beaten 1 1/2 cups milk 2 cups flour, sifted 1 teaspoon baking powder 1/2 teaspoon salt Directions: Pour oil in electric skillet and heat to 375 degrees. Combine beaten eggs and milk in mixing boil. Sift flour, baking powder, and salt; add to egg mixture. Beat until smooth. Batter should be medium weight, resembling pancake batter. Hold a finger over the hole, and pour 1/4 cup batter into a small-holed (3/8 to 1/2-inch) funnel. Starting at the center of the skillet, draw a spiral with the batter so that each ring just touches the next one. Fry 2 minutes; turn over and fry 2 minutes. Drain on paper towel. Sprinkle with powdered sugar. Serve with syrup, jelly, or a mixture of melted butter and lemon juice.
