GREEK PASTA SALAD

Ingredients:

1 LB of Orzo pasta

1 LB of feta cheese (crumbled)

1 1/2 cups of oil cured olives

2 bunches of scallions (chopped)

(The kind that have to be pitted)

3/4 cup of fresh parsley

1 1/2 tsp. dry rosemary

(chopped)

3 cloves of garlic (minced)

juice of 2-3 lemons

3/4 cup olive oil

3 tomatoes (chopped)

Fresh pepper to taste

Directions:

Cook pasta per instructions. Mix in a little olive oil to prevent sticking and set aside. Mix all ingredients together and enjoy.

Helpful Hint - Before chopping tomatoes, cut them in half and squeeze to get rid of the seeds.
