MACADAMIA NUT MUFFINS RECIPE

Makes 1 Dozen

Ingredients:

8 oz. Cake Flour
5 oz. Butter, Soft
8 oz. Sugar
pinch Salt
2 ea Eggs, fresh med. beaten
pinch Baking Powder
2 oz Macadamia nuts, fine
2 oz.Water
1 oz Macadamia nuts, diced
12 ea Baking Cups, 4 1/2" circle

Directions:

Blend flour, baking powder and sugar. Mix in butter for 2 minutes, add water. Mix 1 more minute. Add eggs and fine nuts. Mix 2 more minutes. Line muffin forms with paper baking cups, (4 1/2" circle) fill muffin mix into cups (12 each). Top muffin mix gently with diced macadamia nuts. Bake 10 minutes in preheated oven 400 degrees. Continue baking at 380 degrees for about 15 more minutes. Remove muffins from oven. Let cool off. Serve warm or at room temperature.
