MY MOM'S PERFECT PECAN CAKE

2 cups sugar

1 4oz. pkg vanilla pudding

6 eggs

2 tsp vanilla extract

1 lb. butter

2 cups self rising flour

1 cup milk

1 1/2 cups chopped pecans

Pre-heat oven to 325 degrees. Grease and flour a tube cake pan. Cream butter and sugar by hand. Add eggs and beat with electric mixer on medium speed. Add 1 cup flour and 1/2 cup milk. Beat well. Gradually add remaining flour and milk, beat again. Add vanilla pudding and vanilla extract. Beat all ingredients well. Add pecans and mix in thourghly. Pour batter into cake pan and bake 50 mins at 325 degrees.
