POTATO CHEESE MUFFINS

INGREDIENTS:

2 cups flour

4 tsp baking powder

1/2 cup sugar

2 eggs

1 1/2 cups milk

1/2 cup cooled mashed potatoes

1/2 cup (or more) grated cheddar cheese

1/3 cup melted butter or margarine

Directions:

Combine flour, sugar, and baking powder. Set aside.

In seperate bowl, beat eggs well, blend in milk, potatoes,

cheese, and melted butter.

Add to dry ingredients, stirring just until moistened.

Spoon batter into paper-lined muffin tins, filling 3/4 full.

Bake at 400 degrees for 25 minutes or until lightly browned.

These are good to have with a light dinner, because they are very rich and filling.
