4-5 medium potatoes, peeled 1 medium onion 3 tbsp flour (heaping tbsp) 1 egg, beaten oil for frying salt and pepper to taste Directions: Grate the potatoes into a large bowl. Drain off the water*. Grate onion into the potatoes, add the flour, egg, salt and pepper. Mix all together and fry in hot oil until lightly browned. Serve with sour cream or applesauce. * This step is important. You won't have the right consistency if you don't drain the water.... I know.....I have made this mistake myself. These are the best potato pancakes I have ever eaten. And I always order them whenever I see them on a menu. I personally enjoy the potato pancakes with lots of sour cream. (Not the healthiest of meals, but they're a treat every once in a while).
