Ingredients: 1/2 cup sugar 1/2 tsp salt 1 tsp ginger (scant) 1 tsp cinnamon 1/4 tsp cloves (scant) 1 1/2 cup pumpkin 1 1/2 cups hot evaporated milk
2 eggs (beaten)
Directions:
Add 3/4 cup water to 3/4 cup milk and heat in saucepan. Blend
together sugar, salt, spices. Combine with pumpkin. Add beaten
eggs. Stir in hot milk. Pour into 9 inch crust. Bake in hot
oven (450 degrees) until crust starts to brown at edges - about
15 minutes. Reduce heat to 350 degrees and bake till filling
has set - about 30 minutes. (Test by inserting knife into center).
PIE CRUST:
2 cups flour, 2/3 cups shortening, dash salt
Blend together the flour and salt. Add shortening. Cut in the
shortening and add a few drops of water at a time until dough
is not too crumbly. Roll out and bake according to directions.
This recipe makes two crusts.
