Quiche Lorraine

1 9 inch pie crust
4 strips bacon
1 onion, thinly sliced
4 eggs, lightly beaten
1/4 cup parmesan, grated
1/4 tsp. nutmeg
1/2 tsp. salt
1/4 tsp. white pepper
2 cups heavy cream (1 cup each milk and heavy cream)
1 cup gruyere or swiss cheese, cubed


Preheat oven to 450 degrees. Cook bacon until crisp and remove from skillet. Reserve 1 tbsp. grease and saute onion until translucent. Crumble and sprinkle bacon, onion and cheeses into pie crust. Combine the remaining ingredients and pour into pie crust. Bake at 425 degrees for 15 min. and reduce temperature to 350 degrees and bake an additional 10 min.
