CREAMY RICE PUDDING

(for a crowd)

1 lb Caroling Rice

2 cups sugar

1 tsp salt

3 tbsp vanilla

3 eggs

1 gal. plus 2 cups milk

Combine:

1 gal milk

1 tsp salt

1 lb. rice

1 cup sugar

Cook on top of stove (over low flame) about 2 1/2 hours until mixture starts to thicken.

Beat together:

3 eggs

1 cup sugar

3 tbs vanilla

Pour into rice mixture and add remaining 2 cups of milk. Continue cooking 5 minutes more and pour into lots of bowls or pans. Sprinkle with cinnamon and refrigerate. Very creamy and delicious!
