Sweet Potato Pie


2 cups cooled, mashed sweet potatoes

1/2 tsp

ground ginger

1/2 tsp ground cinnamon

1/2 cup

softened butter

1/2 tsp ground nutmeg

2 eggs (separated)

1/2 cupmilk

1 cup firmly packed brown sugar

1 unbaked 9" pie shell

1/4 tsp salt


Combine sweet potatoes, butter, egg yolks, brown sugar, salt and spices; mix well. Add milk, blending until smooth. Beat egg whites until foamy; gradually add 1/4 cup sugar, beating till stiff. Fold into sweet potato mixture. Pour filling into pie shell. Bake 400 degrees for 10 minutes. Reduce heat to 350 degrees and bake 30 additional minutes. When cool garnish with whipped cream.
