MOM'S WHITE CHICKEN SAUCE
1 pkg chicken parts (backs, necks, wings)
2-3 tbsp oil
1 small onion, chopped
1 tsp oregano
salt & pepper to taste
2 cups water
Wash the chicken parts and brown in oil. In large pot, saute the onion in oil until soft. Add oregano, salt and pepper to the onion. Add the water and chicken. Cook 1/2 to 3/4 hour on meduim to low heat.
This is one of my favorites, and so simple. Serve over macaroni or spaghetti. Make sure you sprinkle with a little grated cheese before serving. Mom always uses Pecorino Romano cheese for all her cooking. . And the secret is that you must grate the cheese yourself. If you buy it already grated, the stores will grate the wax into it.
