KATHY'S ZUCCHINI BREAD

Ingredients:

2 cups flour, sifted
1 1/2 cups sugar
3 tsp cinnamon
1 tsp salt
1/4 tsp baking powder
1 tsp baking soda
2 cups zucchini, grated and drained
1 cup raisins (optional)
1 cup chopped nuts (optional)
3 eggs
1 cup vegetable oil
2 tsp vanilla

Ingredients:

Combine all but the last three ingredients in a large bowl. In a separate bowl, beat the eggs, oil and vanilla. Pour this over the flour mixture. Pour into 2 greased and floured loaf pans. Bake @ 350 for 1 hour.

This is a very moist bread. The secret is the oil that is added to the batter. A great recipe for use in the summer when you are swamped with zucchini from your garden. Suffer and turn on the oven....it's worth it.
