By now you must be wondering, "What does a name like Trevor's Bay Trading Company Have to do with Italian food?" You ask your self where is this so called Trevor's Bay?

You might think it's a bay on the Isle of Capri.

Perhaps somewhere in the Med?

Not even close!

What does it have to do with Italian cooking?


There is, however, a story...

  • Trevor's Bay is a place I have found in the caribbean, about a four day sail out of St. Thomas. It is a reef strewn bay where no honorable Captain in his right mind would venture. I do..

  • Trevor's Bay is named after the man who first brought me there. It is a place of splendid isolation; a place where the stars seem to line up on command; where we do our best thinking. It is where we are our most creative with food.

  • I don't really know if it has something to do with the stars, or the tranquility. Perhapse it has to do with the forth day of sailing the island chain that we've completely relaxed. Some say it's the rum punch...

  • You are invited to enjoy the wizardry (more like the insanity) and the mastery of our creative Italian cuisine.

    One Important Note:

  • Travelling on the open sea, we learn to appreciate our environment. From crystal clear water to pure fresh air.

  • You can help us maintain a healthy and refreshing dining environment, by not smoking within the premisis. Your food will certainly apreciate it, as will those of us with sensitive noses.

  • Crostini with Toppings $6.95

    Fresh baked Italian Bread, sliced then grilled with olive oil, served with assorted toppings:

    Roasted Red Pepper Paste
    Grilled Onion and Tomato
    Wild Mushroom Salsa
    Fresh Mozzarella Slices
    Pan-fried yellow and red peppers
    Slices of ripe plum tomatoes

  • Scampi Pane Tostato $6.95

    Jumbo shrimp sauteed with roasted garlic, sun dried tomatoes, fresh parsley, basil and white wine served on crostini toasts.

  • Grilled Sea Scallops $6.95

    Sea scallops, marinated in fresh herbs and grilled. Served on a bed of field greens.

  • Eggplant and Mozzerella $4.95

    Layers of fresh mozzerella and grilled eggplant with our special roasted red pepper paste. Topped with plum tomato and fresh basil, and garnished with pesto.

  • Stuffed Clams Fontina $5.95

    Tender clams stuffed with wild mushrooms, spinach, fresh herbs and fontina cheese; grilled over hot coals and placed on a simple bed of lettuce.

  • Pizza Bread $3.95

    A fresh baked focaccia style bread grilled, then baked with slices of fresh mozzerella cheese, ripe plum tomatoe sauce, and fresh basil.

  • Grilled Vegetable Tart $3.95

    Garden vegetables including, but not limited to, yellow squash, mushrooms, peppers, eggplant, and onion, are grilled with fresh herbs and placed in a pastry shell. This is so good you'll want the whole thing, but we only sell it by the slice.

  • The Soup $2.25

    A clever blend of food stuff consisting largely of liquid and made by cooking meat, fish, vegetables, etc. (According to Websters, assuming they could cook.)


  • The Hennesey $5.95

    A new variation on a classic, this Caesar salad is tossed with sun dried tomatoes and roasted pignoli nuts, and is good for you.

  • The House Salad $2.95

    Garden greens topped with plum tomatoes, croutons, Bermuda onion slivers and olives. Served only with our fresh basil vinaigrette.

  • Grilled Vegetables on Field Greens $5.95

    Garden fresh vegetables: squash, eggplant, artichoke hearts, shitake mushrooms, red and yellow peppers, grilled and carefully placed on a bed of field greens.

  • Seafood Salad $8.95

    Shrimp, scallops and calimari tossed with sun dried tomatoes and fresh basil in a lemon-pepper olive oil dressing flavored with seafood juices. Garnished with crostini breads


  • Penne Gianni $8.95

    Fresh made sausage, braised with eggplant, garlic, capers, black olives, plum tomatoes, and spinach with penne.

  • Shrimp and Scallops deGanahl $14.95

    Jumbo shrimp and sea scallops sauteed in olive oil, with a full bodied sauce of eggplant, sun dried tomatoes, and just a bit of magic. Tossed with pasta and thrown carelessly about the room just prior to service at no extra charge.

  • Pasta Primavera in a Three Cheese Sauce $9.95

    Fresh vegetables, tossed with a delicate sauce of Asagio, Fontina and Reggianito with cream, fresh plum tomatoes, porcini mushrooms, finished with just a hint of fresh bay, and roasted garlic

  • Spaghetti and Meatballs $17.95

    Freshly ground beef, mixed with all sorts of really cool things, then rolled into little balls which are then baked, and simmered in marinara; we hold the original recipe made for Caesar himself, and if you've read this far you'll know we're just kidding, and we don't really have this dish. Sorry to have wasted your time, thank you

  • Paella Italiano $13.95

    Not exactly a pasta dish, but starch just the same; chicken and sausage and bits of beef; with saffron and herbs it's really tame; mix in some fish like shrimp and scallops; this is what we eat when stuck on a reef.


  • Herb Crusted Filet Mignon $14.95

    Center cut tenderloin, coated with fresh herbs and grilled. Served with Chianti Glaze and Vegetables. We're not at liberty to discuss its aroma while cooking

  • Sirloin $14.95

    Certified Angus Beef. Better than the steak served in famous steakhouses. Served with vegetable. (ketchup served upon request)

  • Chicken Nichole $10.95

    Tender chicken breast stuffed with sausage, imported mushrooms, fresh spinach, tomatoes and cheese. Braised and roasted with fresh herbs, plum tomatoes on pasta.

  • Chicken Augusto $13.95

    Pieces of tender breast braised with fresh made sausage, lemon, red and yellow peppers, fresh rosemary, fennel, and potatoes. It is a light but filling dish; subtly flavored, yet robust in taste.

  • Chicken with Vegetables and Nuts $9.95

    Boneless breast sauteed in herb oil, with vegetables, garlic, toasted pignoli, and sun dried tomatoes. Finished with white wine and tossed with pasta

  • Chicken Giambotta $9.95

    Boneless breast sauteed with fresh sausage, vegetables and other stuff, served with penne

  • Lamb Chops $13.95

    French cut chops seasoned with fresh herbs and grilled. Served with just picked spinach.

    Swwordfish steak stuffed with pesto, spinach, tomatoes, fresh mozzerella and raisin. Braised and roasted with fresh rosemary, porcini mushrooms, and white wine. Served on pasta

  • Grilled Swordfish with Red Pepper Paste $13.95

    Tender fresh fish, marinated and grilled. Topped with our famous Roasted Pepper Paste, and served atop pesto pasta. Lending itself to the colors of the Italian flag.

  • Scampi Fritto di "Big Al" $14.95

    Pan Fried Jumbo Shrimp (Al says they're behemoth) with fresh basil, pancetta bacon, in an orange wine sauce. Served on pasta tossed with field greens.
