Zucchini Tomato Summer Casserole


2 Large fresh tomatoes, sliced
2 medium zucchini or summer squash, sliced
2 medium onions, sliced
16 oz mozzerella, sliced
1 1/2 cups croutons
1 tbsp grated romano cheese
Salt & pepper to taste
6 - 10 fresh basil leaves (Depending on size)

In a large casserole, place a layer of onion slices, followed by a layer of squash. Put in half of the croutons in the next layer. Place tomato slices over croutons. Salt & Pepper to taste. Evenly place half the basil leaves on tomatoes. Top with a layer of mozzerella.

Repeat the above for a second layer. Top with grated romano.

Bake in 350 degree oven for 45 minutes to an hour (When the sides begin to bubble and the top starts to brown).
